Butterfly Pea, also known as Clitoria Ternatea, is a vine that belongs to the Fabaceae family. It is a native to Southeast Asia. Due to its beautiful vivid color, it is used as natural food coloring.
Clitoria Ternatea is also famous as a traditional Ayurvedic medicine. It is known to improve female reproductive organ and memory. It is also used as a natural anti-stress and anti-depressant.
Butterfly pea tea is great for Kombucha brewing. It contains tannins, that is used by the kombucha culture to thrive on, like the Camelia Sinesis plant where all teas (green, black, white) come from.
Clitoria Ternatea is naturally caffeine-free, so people who have issues with caffeine can use it for kombucha brewing. But it will not be 100% caffeine-free due to the starter liquid that we will be using. The kombucha tea it will produce will have significantly less amount of caffeine though. The tea and the SCOBY that a butterfly pea kombucha produces will be a vivid blue or purple color.
